Cilantro

FACTS – The leaves and stem possess a slightly citrus flavor. Cilantro herb is very low in calories and contains no cholesterol. Its deep leaves possess good amounts of anti-oxidants, essential oils, vitamins and dietary fiber. The leaves and stem tips are also rich in numerous anti-oxidant polyphenolic flavonoids. The herb is a good source of minerals like potassium, calcium, manganese, iron and magnesium. It is also rich in many vital vitamins, including folic acid, riboflavin, niacin, vitamin A, beta carotene, vitamin C. Cilantro is one of the richest herbal sources of vitamin K. Cilantro goes well with avocado, chicken, fish, ice cream, lamb, lentils, mayonnaise, peppers, pork, rice, salads, salsas, shellfish, tomatoes and yogurt.
