FACTS – Indian corn has many different arrays of multicolored kernels, which adorn doors and grace center pieces in the autumn. They look great next to pumpkins, gourds and scarecrows. It is edible, but not sweet. It has a pretty starchy texture. Indian corn can be grounded to make flour. Some people like to coat the Indian corn with lacquer to give it a shiny appearance, while others prefer the natural look.
